Easy Cheesy Chicken Buffalo Sliders

If you’re looking for an easy and delicious tailgate dish or a shareable party appetizer, this recipe is always a crowd pleaser! Growing up I was a picky eater, but a sure fire way to get me to eat something was to add cheese. So this is my take on Cheesy Chicken Buffalo Sliders.

This recipe makes eight Buffalo Chicken Sliders. For a rule of thumb, one chicken breast makes four sliders, so use two in this recipe. This dish can be served hot or cold, whichever you prefer!

Ingredients

Chicken Breast:

3/4 cup Mayonnaise

1/3 cup Sweet Baby Ray’s Buffalo Wing Sauce:

1 tbsp Mustard

1 tsp Salt

2 tsp Pepper

2 tsp Garlic Powder:

1/2 - 1 tbsp Tony Chachere’s Creole Seasoning

1 stick of Butter

1 cup Shredded Cheddar Cheese

Instructions

Preheat oven to 400 degrees

Cut chicken breast into 1 inch size cubes

In a large mixing bowl add:

1/2 stick Melted Butter

Buffalo Sauce

Pepper

Salt

Garlic Powder

Tony Chachere’s Creole Seasoning to taste (between 1/2 tbsp - 1 tbsp)


Whisk together

Melt 1/2 stick butter into a glass or pie baking pan (I believe more butter, more better) but you can also use a non stick spray

Pour ingredients into pan

Add chicken into pan with sauce


Cook in oven for 14 - 16 minutes

Remove pan and let cool for 10 minutes

Shred chicken in Kitchen Aid or in a large bowl with a fork


To the Kitchen Aid or large bowl add:

Shredded cheese

Mayonnaise

Mustard

Optional: add another 1/3 cup buffalo sauce


Mix together

Let cool or place in fridge to chill

Spoon out mixture onto Hawaiian Rolls

Brush melted butter on top of each roll

Sprinkle black pepper onto sandwich
